Can anyone tell me why Italian was picked as the language that the instructions are written in? Who or what group of people decided this and why Italian out of all the languages they could have picked?

Perhaps because the influence of the italian masters was very important at the renaissance and the baroque periode.

We musn't forget that the renaissance began in Italia, that the baroque mooving began in italia. The italian were always the people who taught the other composers : monteverdi was the master of the opera and of the madrigal, vivaldi (the most extraordinary violin virtuoso of his time)invented the concerto... So this italian tradition conducted us to what we know nowadays.
